Gluten Free Savoury Muffins


Ingredients:

  • 1 1/2 cups Gluten Free Self Raising Flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 1cup of milk
  • 6 Tbsp of margarine
  • 1 large egg
  • 1tsp honey
  • 1/4 cup of bacon bits
  • 1/2 cup cheddar cheese
  • 3/4 cup of corn
  • 1/3 grated zuchinni


Method:
Preheat oven on 180 degrees (160 degrees on thermofan). Line and spray muffin a pan
In a medium bowl combine flour, baking powder and salt and set aside. Using your Bamix processor, cur the zuchinni in pieces and chop with Bamix. precook bacon in a small pan and set aside. In a small bowl add milk, margarine, egg, and honey and use bamix whisk to combine.

Add all wet ingredients to bowl with dry ingredients, then gently fold in the zuchinni, bacon and cheese until it is mixed well.

Scoop into a 12 muffin pan filling each at least 3/4 full. (optional: you can top with cheese as well)

Bake for 20-24 minutes or until the center is set and golden ontop. Allow cooling for 5 minutes and enjoy.
