Gluten Free Choc Banana Loaf Recipe
Ingredients:
- 1 1/2 cups of Gluten free self raising flour
- 1/4 tsp Baking soda
- 1/4 tsp Cream of tartar
- pinch of salt
- 2/3 cup of sugar
- 8 tblsp melted margarine (cooled)
- 1 tsp Vanilla
- 2 Eggs (seperated)
- 1 tsp Vanilla
- 1 cup Milk
- For Icing:
1 1/2 cups of Icing sugar (can be made by using your Bamix)
1-2 tblsp milk
Method:
Preheat oven on 180 degrees (160 degrees on thermofan).
Recipe works for baked doughnuts or for use in a doughnut maker machine. Spray your doughnut pan with non-stick cooking spray.
In a large bowl mic all dry ingredients.
In a sperate bowl with your bamix whisk tool mix egg yolks, sugar, melted margarine and vanilla. Add all dry ingredients and whisk together. Beat the egg whites until a bit stiff with your bamix whisk tool. mix together with all other ingredients.
Bake for approx 15-20 minutes (gluten free takes a touch longer). Remove from oven and place on a cooling rack.
Once cooled down, mix your icing for dipping (if your icing is too runny there will only be a thin layour on your dougnnuts).
Make your own Icing using your Bamix
Put 1/2 cup of white sugar in your Bamix Processor. Process for approx 3-5 min to get a super fine consistancy and create your own Icing (powdered) sugar.
'Tip you can transfer mixture to a ziploc bag and cut the corner to easily pipe into doungut tin without making a mess.
