Method: In a large mixing bowl combine the lemon zest, juice, eggs, sugar and buttermilk and whisk with bamix. One mixed add canola oil, salt, gluten free flour and baking powder. Gently add in the cranberries with a rubber spatula. Pack muffin holders in muffin pan, pour in ingredients in evenly making sure to get cranberries in each container. and bake for 18-20 minutes. Cool the muffins in the pan for 5 minutes, then transfer to a wire rack. Drizzle with a bit of icing sugar for decoration. Healthy baking with Bamix SA.
