Gluten Free Fluffy Cranberry Muffins


Ingredients:

  • 1 cup of fresh cranberries or 3/4 cup dried cranberries
  • 1tbsp sugar
  • 2tbsp lemon juice
  • zest of a lemon
  • 3tbsp lemon juice
  • 2 large eggs
  • 1/2 cup margarine
  • 1/3 cup of buttermilk
  • 1/3 cup canola oil
  • pinch of salt
  • 3/4 cup Gluten Free self raising flour
  • 1/4 tsp baking powder


Method:
Preheat oven on 180 degrees (160 degrees on thermofan).
Toss cranberries, sugar and 2tbsp of lemon juice in a bowl to soak.

In a large mixing bowl combine the lemon zest, juice, eggs, sugar and buttermilk and whisk with bamix. One mixed add canola oil, salt, gluten free flour and baking powder. Gently add in the cranberries with a rubber spatula.

Pack muffin holders in muffin pan, pour in ingredients in evenly making sure to get cranberries in each container. and bake for 18-20 minutes. Cool the muffins in the pan for 5 minutes, then transfer to a wire rack. Drizzle with a bit of icing sugar for decoration.
