Gluten Free Choc Banana Loaf Recipe


Ingredients:

  • 1/2 cup melted margarine
  • 3 large mashed bananas
  • 1/3 cup buttermilk
  • 3 eggs
  • 1tsp vanilla
  • 1 cup brown sugar
  • 2 cups self-raising gluten free flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch salt
  • 1 cup of choc chips


Method:
Preheat oven on 180 degrees (160 degrees on thermofan).
In a large bowl mix margarine, mashed banana, buttermilk, eggs and vanilla with bamix® aerator blade. Add brown sugar and mix well. With a spatula mix all the dry ingredients in, then add the choc chips and mix well.

Grease / spray a loaf pan, pour in ingredients and bake for 45min - 1hour. Remove from oven and let stand for 5min before removing from the loaf pan. Cut into slices and enjoy with butter or jam. The next day the Gluten Free Choc Banana Bread can be toasted and tastes amazing.
