Mini burger with strawberry BBQ ketchup


Strawberry BBQ ketchup

Ingredients:

  • 200g strawberries
  • 200ml water
  • 100ml chopped tomatoes
  • 50ml balsamic vinegar
  • 1 glass roasted bell peppers
  • 1 garlic clove
  • 3 Tbsp strawberry jams
  • 3 Tbsp honey
  • 2 Tbsp soya sauce
  • 2 Tbsp olive oil
  • 1 Tbsp coriander
  • 1 Tbsp ginger
  • 1 tsp worcestershire sauce
  • 1 tsp dijon mustard
  • 1 pinchsalt and pepper


Method:
Wash the strawberries for the BBQ sauce. Place the strawberries in a casserole dish and allow to caramelise for about 25 minutes at 200 degrees. Remove from the oven and allow to cool slightly. Drain the bell peppers and chop them, using the bamix® with the meat mincer. In the meantime, sauté the spices (coriander seeds, garlic, ginger) in a pan with a little oil. Once they have taken some colour, add the peppers and also sauté briefly. Add the honey and mustard and stir, so that everything combines nicely with the peppers. Make sure it does not burn.
Then add water and the chopped tomatoes, balsamic vinegar, Worcestershire sauce and soy sauce. Simmer gently for at least 30 minutes while stirring. Finally, add the caramelised strawberries. Then stir in the strawberry jam and purée everything coarsely, using the bamix® with the mincer. Finally, season with smoked salt and the pepper ground using the bamix® with the processor.


Beef patty

Ingredients:

  • 500g beef
  • 30g bacon
  • 10 buns
  • 1 onion
  • 1 handful rocket
  • 1 pinch salt and pepper

 

Method:
Chop the beef, using the bamix® with the meat mincer. Fry the bacon in a hot barbecue pan, so that it becomes nicely crisp. Season the previously minced beef with just a little salt and freshly ground pepper and knead well with your hands. Form the meat into balls of equal size, pressing them flat with the palm of your hand. Prepare the barbecue (with lid, approx. 200 degrees) for direct heat. Barbecue the beef patties in direct heat, with a closed lid, for 3–4 minutes on each side. Wash the rocket salad, spin it dry and tear it to make it slightly smaller. Peel the onion, cut it in half and then into thin rings.
First cut the buns in half, put some rocket salad on the lower half, then add half of the roasted bacon and some onion rings, put the freshly roasted beef patty on top and add 1 tablespoon of strawberry BBQ ketchup to the beef. Finish with the top of the bun.
