Wow your family and friends this Easter with our SliceSy Competition winner's recipe. The delicious combination of creamy homemade custard, sandwiched between cream crackers is perfect for afternoon tea.
Heat the milk , sugar and butter in a pot. Bring to a gentle simmer and ensure all the sugar is dissolved.
Mix all dry ingredients in a bowl.
Beat egg yolks till creamy.
Add the water to it and continue to blend with your bamix and then slowly start incorporating the dry ingredients until they are finished.
Use your bamix to beat the egg whites until stiff.
Go back to your custard mixture. Pour a little of the warm milk mixture from your pot into the to the egg custard mixture and blend.
Add the remaining egg custard mixture into the pot and put on high heat - bring to a boil.
Once boiling remove from heat immediately and beat in the stiff egg whites until smooth. Do not over mix as you will lose volume.
Grease a tray and put down one layer of cream cracker biscuits.
Pour all the custard over immediately. When all the cream crackers are covered and put another layer of cream crackers on top.
Leave to cool then place in refrigerator until cold and set.
Cut into individual slices and top with an icing sugar and water glaze.
It is the perfect afternoon treat to have with a hot cup of coffee.
